The regulations prohibit the use of feeds and silage. In the Orobic Alps the plentiful fresh water, sunshine and differences in altitude contribute to the presence of a rich floral variety, which in turn gives the milk its superior nutritional quality.<\/p>\n<p>The biodiversity of the mountain environment, it\u2019s perfumes and aromas, give unique characteristics to each wheel of Heritage Bitto produced in the few alpine locations of the Consortium.<\/p>\n<\/div>\n<ul>\n<li>\n<p>        <img decoding=\"async\" src=\"\/wp-content\/uploads\/2022\/05\/COTTURA.jpg\" alt=\"cottura\"><\/p>\n<h3>cottura<\/h3>\n<\/li>\n<li>\n<p>        <img decoding=\"async\" src=\"\/wp-content\/uploads\/2022\/05\/ESTRAZIONE.jpg\" alt=\"estrazione\"><\/p>\n<h3>estrazione<\/h3>\n<\/li>\n<li>\n<p>        <img decoding=\"async\" src=\"\/wp-content\/uploads\/2022\/05\/PRESSATURA.jpg\" alt=\"pressatura\"><\/p>\n<h3>pressatura<\/h3>\n<\/li>\n<\/ul>\n<hr>\n<h3>Milk<\/h3>\n<div>\n<p><span>The pasture grass eaten by the livestock enriches the quality of their milk, which becomes rich in polyunsaturated fats and essential omega 3 fatty acids, both beneficial for health and wellbeing.<\/span><\/p>\n<p><span>This special milk is obtained by milking cows and goats twice a day: the first milking is at 6 AM and the second at about 4 PM.<\/span><\/p>\n<p><span>The milk is processed immediately after milking, in a structure called \u201ccal\u00e8cc\u201d, which is an itinerant dairy erected on the pasture. It\u2019s important to process the milk onsite in order to avoid bacterial contamination and changes caused by transportation.<\/span><\/p>\n<\/div>\n<p><img decoding=\"async\" src=\"\/wp-content\/uploads\/2022\/05\/latte.jpg\" alt=\"latte alpeggio\"><\/p>\n<hr>\n<h3><span>Processing in the Cal\u00e9cc<\/span><\/h3>\n<div>\n<p><span>Inside the \u201ccalecc\u201d we find the traditional \u201cculdera\u201d, a large copper cauldron shaped like an upturned bell, which can weigh up to 50 kg. The cow\u2019s milk, fresh and still warm, is placed in the \u201cculdera\u201d together with a percentage of goat\u2019s milk (10-20%).<\/span> <span>The milk is then warmed over the fire using a wooden swivel hoist, called a \u201cm\u00e0sna\u201d, until it reaches 35-37\u00b0C.<\/span><\/p>\n<p><span>After removing the \u201cculdera\u201d from the fire, calf\u2019s rennet is added to coagulate the milk. The resulting curd is then finely broken with a tool called a \u201csp\u00ecgn\u201d, a wooden pole with metal strings on one end that comb the curd until it resembles rice grains. The \u201cculdera\u201d is then placed over the fire again and brought to the final temperature of 50-52\u00b0C in the space of two hours.<\/span><\/p>\n<p><span>Once this temperature is reached, the cheesemaker uses a linen sheet to remove the curd. He then presses the curd into the \u201cfascere\u201d, round wooden bands of about 50 cm diameter which give the cheese it\u2019s shape.<\/span><span> The \u201cfascere\u201d containing the pressed curdare then placed on a slightly tilted wooden shelf, called \u201cspres\u00f9n\u201d, which lets the whey drain out of the cheese into a specially prepared gutter.<\/span><\/p>\n<p><span>At this point, the liquid that is left in the \u201cculdera\u201d is the whey which will be used to produce mascherpa (a soft cheese called also \u201cricotta\u201d).<\/span><\/p>\n<\/div>\n<p><img decoding=\"async\" src=\"\/wp-content\/uploads\/2022\/05\/CALECC-2.jpg\" alt=\"calecc\"><\/p>\n<hr>\n<h3>Equipment<\/h3>\n<div>\n<p><span>Most of the equipment used during cheesemaking is made of wood. Producers of \u201cStorico\u201d cheese consider this very important because wood is porous and breathable, letting the cheese dry and breathe during shaping and salting. Wooden equipment is also essential in order to preserve the local tradition and characteristics of each pasture.<\/span><\/p>\n<p><span>Wooden equipment contains a special microflora which prevents contamination by external microbes. The ripening process starts in the \u201ccas\u00e8re d\u2019Alpe\u201d (alpine cheese cellars) and is completed in the Cas\u00e8ra in Gerola Alta.<\/span><\/p>\n<p><span>The natural climatic change of the production area is of importance to the ripening process.
