Slow Food Presidium Storico Ribelle Caröl is the solution for the indecisive: packages of about half a kilo that contain cuttings of a variety of different shapes, from different pastures and ages. Cuttings are considered second-rate because they come from forms with some minor defects: That is why some change in color or a more “assertive” scent is natural.
Storico Ribelle is produced exclusively during the summer months in alpine pastures:the livestock consisting of dairy cows ( traditionally of the Alpine Brown breed) and goats ( of the Orobica breed indigenous to the Valgerola) are driven to the pastures in June and remain there, weather conditions permitting, until September.
The cattle and goats feed exclusively on alpine pasture; in fact, by regulations it is forbidden to supplement the diet with feed and silage; the environment of the Orobian Pre-Alps, due to exposure, the abundance of watercourses and variations in altitude, presents a floral variety that gives the milk superior nutritional properties.
The biodiversity of the mountain environment, its scents and aromas, give unique organoleptic characteristics to each Storico cheese produced in the mountain pastures belonging to the Preservation Consortium.
